Unless you've become a maple connoisseur, you probably aren't sure what a grade of maple syrup is, let alone which you prefer.
Maple syrup comes in the following grades, listed from lightest in color to darkest:
Nr 1 Extra Light
Nr 1 Light
Nr 1 Medium
Nr 2 Amber
Nr 3 Dark
The grades are based mostly on the color of the syrup, although the flavor will most often correlate very closely with the color-- the lighter the color the lighter the flavor, and the darker the color the stronger the flavor.
What Grade of Syrup Do I Want?
The different grades of maple syrup most often have different uses, depending on your tastebuds. Many people will use the darker grades (Nr 2 Amber or Nr 3 Dark) for cooking, however some people do like these as table syrups as well. Nr 1 is most often used in desserts, or as a topping for ice cream, however some people prefer the light flavor for their table syrup. The most popular table syrup grades are Nr 1. They balance their color with a medium strength flavor that is pleasing to most palates.
